Easy And Fast Pumpkin Quesadilla Recipe – Perfect For Fall!
Pumpkin Quesadillas are a REAL thing, and they are absolutely amazing! Fall is upon us, and that means it’s time to stop grilling dinner every night whipping up some salad. For some reason when people think of “Fall Recipes,” their mind automatically goes to home-cooked meals and comfort food that take hours to prepare, and that doesn’t have to be the case. You can enjoy delicious Fall-themed dinners that don’t take an entire day to prepare and are absolutely yummy!
When I first heard of Pumpkin Quesadillas, I was mildly concerned. I love Quesadillas, and I love pumpkin-flavored anything, but somethings just aren’t meant to be mixed. Right? Wrong! Basically, just have to erase any preconditioned expectations that you have of Quesadillas, there’s no chicken, no beans, no salsa, basically the only thing Pumpkin Quesadillas have in common with traditional Quesadillas is the flour tortilla shells.

Like traditional Quesadillas, Pumpkin Quesadillas are rather simple to make and can be prepared in less than half an hour.
You will need to assemble the following ingredients:
Flour Tortilla Shells
2 Cups Pumpkin Puree (you can use store-bought or whip up your own)
4 Oz. Crumbled Goat Cheese
½ Cup Chopped Walnuts (Plain or Candied, You can add more nuts if you like)
Oil or Cooking Spray
Mix the pumpkin, cheese, and nuts in a bowl until completely blended. Then, proceed to prepare your Quesadillas however your normally would, only using the delicious pumpkin filling. Personally, I put a skillet on low-heat and spray it with cooking spray. (I am not a huge fan of using vegetable oil on Quesadillas.) Lie a quesadilla in the pan, once it is hot, and then add the filling to one side and fold in half. One the cheese starts to melt and the Quesadilla seems to be sticking together, you can flip it until you reach your desired crispiness.
