This Shrimp Zoodle Scampi (or Shrimp Zucchini Noodle Scampi) is an easy vegetable pasta recipe. If you are cutting carbs thanks to diet plans like Atkins, or simply trying to eat healthier, the vegetable packed dish will be a great addition to your low carb recipe collection. 2 medium zucchini, spiraled into zoodles 1/2 lb of fresh shrimp, peeled and de-veined 2 tsp. olive oil 1 tsp of red pepper flakes OR Mrs. Dash Extra Spicy Seasoning 1/4 C. green onions, chopped 1-2 tsp. minced garlic salt & pepper to taste
1. Heat the olive oil, minced garlic and the green onion in a medium size saucepan on medium heat. Add in the zoodles and saute until tender about 10 minutes. 2. Add in the fresh shrimp and saute until cooked through and turn pink, turning so they cook evenly. 3. Add in the seasoning and salt & pepper to taste. 4. Remove from heat and serve.
Making your own zoodles is actually easier than it looks. You can purchase inexpensive slicers or use your food processor attachments to create these healthy vegetable noodles.
