This Southwest Black Bean and Avocado Salad mixes the rich and creamy meat of an avocado with the hearty and filling nature of black beans. Hunger will be satisfied and the spicy flavors sing through a pleasing smokey heat courtesy of a little cumin. Beyond the delicious taste of this salad, the health benefits of the ingredients are amazing!
Avocado: The green fruit can lower cholesterol and triglyceride levels, contain more potassium than bananas, and their healthy fats help your body absorb nutrients from plant foods.
Black Beans: These legumes can boost your iron intake, and the “Journal of Agricultural and Food Chemistry” found black beans to have a greater antioxidant activity than other type of beans. That means, the are the best beans to neutralize cell-damaging free radicals, and help lower the risk of heart disease and cancer.
Cumin: Aids in digestion, improves immunity, treats piles, fights insomnia, and helps with respiratory disorders, asthma, bronchitis, common cold, lactation, anemia, skin disorders, boils, and cancer.
To make this yummy salad, you will need:
1 Avocado, diced
½ C. canned or frozen corn, thawed
½ 14.5 oz can of black beans
1 tomato, diced
1 tsp. cumin
salt & pepper to taste
½ a lime, juiced (optional)
Directions –
#1. Combine the avocado, corn, black beans, tomato, cumin and lime juice (optional) and gently stir all the ingredients.
#2. Add salt & pepper to taste.
#3. Serve immediately.
*Makes approximately 2 servings. Recipe can be easily doubled if needed.
As a vegetarian, I never, ever get tired of black beans and avocado. Your salad looks so fresh and colorful. I haven’t had lunch yet. Wish I had an avocado, but I’m out. I’m adding it to my grocery list so I can make this.
What I really love about a recipe like this one is that you can go full on vegetarian, or if you’re a carnivore like me, you can make it a base for a protein. I love this!
