Recipe: Pumpkin Raisin Oatmeal Cookies

I can’t believe how fast Fall came, br……  I just got back from Rome last week and was enjoying 85 degree weather while I was there and now one week later it is a balmy (NOT!) 56 degrees.  Once the weather starts to change I don’t know about you but one of the things I like to do is start baking.

This weekend I decided to make cookies and made this yummy recipe for Pumpkin Raisin Oatmeal Cookies.  I have included the recipe below.  They are easy to make and yummy. Try them out you won’t be disappointed!

Pumpkin Raisin Oatmeal Cookies
 
So easy to make and so yummy!
Recipe type: Cookies
Ingredients
  • 1 ½ cup Flour
  • 1 tsp Cinnamon
  • 1 tsp Ginger
  • ½ tsp Nutmeg
  • ½ tsp Cloves
  • 1 tsp Baking Soda
  • ½ tsp Baking Powder
  • ½ cup Butter, Melted
  • 1 ½ cups Sugar
  • 1 cup Pumpkin Puree
  • 2 cups Rolled Oats
  • 1 cup Raisins
Instructions
  1. Preheat oven to 375 degrees.
  2. Grease cookie sheet and set aside.
  3. Combine flour, cinnamon, ginger, nutmeg, cloves, baking soda and baking powder in a medium sized bowl. Mix and then set aside.
  4. In a large mixing bowl, on medium speed, combine melted butter, brown sugar, sugar and banana puree. Mix for 30 to 40 seconds.
  5. Slowly add the flour mixture ½ cup at a time. Mix for about a minute.
  6. On low speed, stir in oats and raisins. Mix just until all ingredients are wet and well distributed.
  7. Spoon batter onto greased cookie sheet and flatten just a little bit with the back of the spoon. Spread about ½-1 inch apart.
  8. Bake for 12-15 minutes. Let cookies cool on pan for a minute or two, then remove and let cool on a wire rack.
